Make your own delicious Rocky Road.

Rocky Road Recipe

Ingredients
160g of biscuits – digestives, ginger nuts, rich tea or whatever you fancy
120g of nuts, cherries, sultanas, Maltesers (I love brazil nuts and walnuts)
250g of good quality dark chocolate. (I love Callebaut chocolate and the milk chocolate drops work so well and taste so good)
125g of unsalted butter
3 tablespoons of golden syrup
100 g of marshmallows – mini pink and white ones work well from the supermarket if you don’t have homemade (if you are using homemade then pop them in the freezer for about 30 mins before using and allow the melted chocolate mixture to cool slightly before pouring over)
Method
Using your hands break up the biscuits into small pieces and place in a large bowl, you can put the biscuits in a bag and use a rolling pin to break them up. You still want to have nice chunks of biscuit!
Roughly chop the nuts, cherries etc into smaller pieces.
Using a heavy based saucepan slowly – (low to med heat) – melt the butter, golden syrup and chocolate, stirring occasionally until everything has melted and the mixture looks silky smooth.
Allow to cool slightly then pour the mixture over the biscuit and chopped nuts mixture and mix well so that everything is covered in chocolate. Stir in the marshmallows. (I often save about a 3rd of the chocolate mixture to pour over the top once its in the tin and pressed down as it gives it a smoother finish)
Tip the mixture into a lined square baking tin and spread to the edges and pat down, sprinkle extra marshmallows over the top and gently press them down so they stick to the chocolate.
Pop in the fridge to set for about 2 hours then cut into squares and enjoy!
